We Eat This The Most

You don’t need a recipe for this.  I dig.  My cousin suggested it to me and we’ve never looked back.  We eat it at least once a week.  And would you believe it’s healthy?  And vegan – if you choose the right ingredients, of course.

Heat up a can of black beans (rinsed) with a can of Rotel.  If you want, add corn too.  Put some cheese on and eat it.  Or fry up some corn tortillas and feast on it like a taco.  Or wrap it up in a soft flour tortilla and have a burrito.

My personal favorite way to eat it is the taco.  I top mine with cheese and ketchup.  Because I was raised in a house that used ketchup on tacos.  It’s good.  Trust me.

It’s the easiest and yummiest thing this poor little kitchen has ever seen.

    1. It’s just a canned mix of diced tomatoes and green chilies. They make a mild version with cilantro that is also good. You gotta try it. I’ve heard its awesome mixed in with Velveeta as a cheese dip too, but I’ve haven’t tried that yet.
